IME the temp on the outside is within 1*F of the inside, going from a test with immersion sensor, scientific thermometer, sensor strapped to outside with bit of towel to insulate outer side, and a IR thermometer. Point being, do what's most convenient imho.

Not for me,I used bubble wrap and a couple of straps. It was holding steady at 62 in the fermenter the entire fermention.I thought ,Awsome!.I took the bucket out of the fermenter with the probe still under the bubble wrap and it instantly started to shoot up the temps in my warmer basement. My wrong doing on the bubble wrap Im sure, but Im liking the idea of the thermowell, not getting more accurate than that Im thinkin

Bumping this thread. Need a thermowell that can accommodate a Johnson Controls A419 (that has the fat, 0.25" OD probe) - any experience / recommendations?

Go DIY and make your own. 1/4" ID stainless steel tube from Amazon, assuming you don't have a local metal supply. For same price you can buy 36" of tubing, then just cut to length and crimp the end of the tube with a vise, it won't leak.

Make two 18" or three 12". They come in all sorts of inside diameters, I went with .250" but there's also a like .260 or something. I can look up my old order if you want to know which one works with the Johnson probe for sure.

And how do you clean the thousands of tiny crevices you created crimping it? You can't. When you can get a spun welded one for so cheap I don't really consider it worth it.

you have no idea what the hell you're talking about. mind showing me the thousands of crevices where the nasties will hide?

you make one crimp with a vise, at the very tip of the tube. the angle of the transition from round tube to flat crimped edge is much larger than 90 degrees, you clean it with a regular sponge or scotch brite pad, its practically flat. two and a half years' worth of fermentations (sach, brett, lacto, pedio, etc) and never a single infection, there is literally no place for crud or gunk to hide.

burn your cash however you see fit, but some of us enjoy being self sufficient. try it before you knock it.
