I just bottled a Rochefort 8 clone with a fairly high gravity and the plan (realistic or not) is to let it age for at least four months. Is the proper temp to store this in a warmer environment, say on the main level of the house, or would sitting it in a cool corner of the basement be sufficient, or even preferred? We usually maintain about 72 degrees in the house, but that will warm up as we move through spring. The basement now is about 65, but that will also move up to about 68 - 70 as we get in to spring.
