I have brewed my very first rhubarb wine and have to say it is pretty good but want to see if adding French oak would make a change and make it better. What I need to know is what do I sanitize wood chips in? Is Star San safe to do this?

I have tried soaking them with a small amount of Kmeta sanitizing solution (just enough to get them wet). I put them in a small bowl and cover them for 10 min. I tried boiling, but I lose too much of the oak flavor and tannins that way unless I add the water as well.

I tend to pick a spirit that I think might go well with what I'm making- Tequilla, Rum, Bourbon, occasionally Vodka if I want it neutral. Generally leave it soaking a couple weeks, butthat's mostly to infuse more flavor.
