I'm going for a nice session beer, an American pale ale. I really don't want something that is overwhelmingly citrusy especially grapefruity.

Which recipe should I partial mash?

RECIPE #1

Grain
3.00# British Two-row Pale
1.00# German Munich 4.8 1.6
0.50# Canadian Honey Malt
0.25# Victory Malt
0.253 American Crystal 10L
3.00# Light Dry Malt Extract



Hops
0.25 Magnum Pellet 60 min
0.50 Sterling Pellet 20 min
0.25 Sterling 10 min
0.25 Sterling 1 min

centenial is going to give you more citrus/grapefruit flavors. at least i think it will, not sure if i got my hops right
 
if you hate citrus hop flavors then definately go with recipe number 1. centennial is going to give you alot of citrus with emphasis on the grapefruit.
 
Agreed, the Centennial/Columbus combo will give you more of that citrus/grapefruit flavor you don't want.

Magnum is a clean bitter, and the Sterlings are a pretty subtle stlye hop, so of those two recipes I would go woth the Magnum/Sterling combo for what you are looking for.

To be fair, with the amount of Centennial/Columbus in your recipe I would say the bittering effect should be pretty mild as the amounts are quite low, but it will be more citrusy then the sterlings.
 
Agreed, if you don't want Citrus go with the Magnum/Sterling combo, that should give you something more on the spicey side. You could also use an English strain of yeast that will make the beer Malt forward, no matter what hops you use. But IMO, that also doesn't make it an APA. APA's should lean more towards hops, borderline IPA.
 
Recipe #1 would certainly be better, although I might be tempted to swap in 0.25 of Centennial at 20 instead of the Sterling. I like the complexity of multiple hops.

Ya I think I like that idea...I don't mind some citrus, I just don't want too much. For example my last APA, was a smash using Amarillo and I hated it.

Would it be bettter to pop in the centennial at 20 or later in the boil?
