I'm getting ready to reuse my first yeast cake. I have heard that I should remove half the trub to avoid pitching. What s the danger in overpitchong a batch if I aerate properly?
From what I have been told you need a certain amount of yeast growth to provide flavour. If you have too much yeast you won't get much growth. So the danger is having a bland beer.
to have healthy yeast in your repitched beer you need 3-5 replications. When you over pitch that doesn't happen, the beer will taste good, might even be great but the yeast cake left is not healthy and should not be repitched.
