Uh, well...it's...different.
If this were mine, my primary concern would be the amount of grain that could get in between everything where I couldn't get a spoon to stir up the grains, which would lead to dough balls and reduced efficiency. So I would make sure to put a lot of strike water in the pot first, definitely enough to cover the manifold, and then start to add the grain while I continued to add water and stir. Maybe even add all of the water first and then add the grain.
A lesser concern might be the mesh on the screens being a bit too fine. But they should be okay. Only one way to find out for sure.
