Recently I attempted to brew BM's SNPA clone, a 1 gallon all grain batch. My ingredients were:
1.5 lbs 2 row
.1 lbs Crystal 60
.1 lbs Carapils
0.2 oz Perle @ 70 min
0.2 oz Cascade @ 10 min
0.1 oz Cascade @ 5 min
0.2 oz Cascade dry hop (I just added the dry hop today after 8 days in primary, planning on letting it dry hop for 7 days)
US-05 yeast
My mash seemed to hold pretty well between 152 and 150 degrees, although when I stirred it after the 60 minute mash my temperature was 148.
The problem was that I overestimated my boil off rate (my previous 1 gallon brew I boiled off nearly 1.5 gallons in one hour and only ended up with .5 gallons of wort at the end of the boil, had to top up). On this brew I used more sparge water to compensate for the expected boil off. Well I ended up with too much wort, probably around 1 and 1/3 gallons. As a result, my OG was 1.032 (target 1.046). It fermented out very quickly and the FG has been stable at 1.005 (target 1.012) for several days.
So what the heck kind of beer did I make? Its going to be a pale, dry, moderately hoppy, low alcohol beer. Light pale ale? Blonde ale? I just hope it comes out tasting okay.
