Hot dogs then the ultimate mess I put together with them.

Full details required, even though some of that is not a part of my current diet.

They usually look better, but I did not have everything I needed so had to use cheddar and different buns than normal. It's a clone of an awesome hotdog I had at a place in Richardson TX called the Dog Haus Biergarten the day they opened (they are a chain I believe).

Thinly slice up an onion and saute them until caramelized and nice and brown. Set aside.
Dice up some jalapenos and set aside.
Wrap hotdogs with bacon and secure with wet toothpicks. Grill the dogs on the indirect side of the grill until bacon is about done, then crisp up the bacon briefly on the hot side of the grill.
Take a package of King's Hawaiian Rolls, separate them into 4 rows of 3 leaving the 3 connected. Slice horizontally so that they open like hotdog buns.
Lightly butter the insides of the "buns", open them, and grill each briefly to brown up the insides.
Make a chipotle aioli with a couple of chipotle chilies in adobo and mayonnaise in a blender or food processor.
Put the cooked dogs on the toasted buns, top with caramelized onions, add some of the chopped jalapenos, crumble Cotija cheese on top, then squirt on the aioli (I put it in a little ziplock bag and cut off the corner so I can pipe it on, but the hole was too big in the picture).

It's an awesome dog :)
 
Never got a picture of the tortilla soup when served and there is zero left! I made it for, and we sent half of it to, a couple of sick kids with late summer colds. Always works wonders. And we scarfed all the rest!

Did a little tomato mozzarella basil balsamic salad last night to go with t-bones and baked potatoes.

Mexican meatball soup? Caldo Albondiga? I've started making the mexican version of meatball soup and love it!
No. Italianish. Meatballs were garlic, pepper, salt, oregano, parsley, parmesan, and egg. Soup was onion, carrot, celery, garlic, diced toms, stewed toms, beef broth, basil, rosemary, thyme, oregano, and pepper.
 
I probably should mention that this is for dinner tomorrow night, so no plated pictures till then. It smells awesome but I am worried it may be to limey. Sauce has zest and juice of two limes. You can definitely smell the lime.
 
What size Dutch over are you using? 7 1/2?
I think it's a 28 (7.25 qt) but it may be a 30 (9 qt). I'll have to look when I get home. It's my primary pot for most everything, as you can tell by the wear :) But the now exposed cast iron has a wonderful seasoning on it and it performs well :)
 
This is one of those simple recipes that is all about quality ingredients.

Pan fried panko breaded goat cheese salad with red wine vinaigrette and spring greens. The cheese has to be the last thing on the plate so its warm and gooey. Amazeballs.
