Oh man, you're killing me.

We only got introduced courtesy of a food tour when we were in Rome.

I never heard of suppli before so looked it up - how does it differ from arancini? It sounds delicious!

Way back when we ate pasta, we had one of those pasta machines where you just dumped the stuff in the hopper and turned it on, selected the die you wanted for the needed shape, and it extruded it out for you! We made some delicious fettucini and spaghetti with it, using good semolina flour from Italy. I sure miss that but alas, flour is pretty much off my menu. I live vicariously through this thread though! :p

They seem similar enough, but someone more educated would know - for sure.

I've never heard of suppli. Now I have and I have to make it. HAVE TO.

I think suppli is rice in sauce rolled up in a ball, with a chunk of mozzarella pushed into the middle, then breaded and fried. Whereas arancini is pretty much the same but with additional ingredients such as carrots and maybe even meat. But don’t quote me on that. I’m not Italian, but I am married to one.
 
I'm starting to be ready for meatloaf! We're gonna be in the 90s again this week but overnight lows in the 60s so meatloaf weather isn't far off!

I did make some chili verde yesterday, from a new recipe, using ground pork. I've always made it with pork shoulder; we'll see how this turned out for dinner tonight. I always try to let it sit in the fridge for 24 hours to meld flavors. Hope it's good; it was certainly easy enough!

Yup! You need to use risotto to be precise.
 
I've never made the choice to consume such animal bits and really don't know one designated name from another 🤷‍♂️
I have eaten sheep and calf testicle, if that's what you're referring to. Prepared right they are fine, it's the mental issue. Years ago in Denver I drank Rocky Mountain Oyster Stout, a beer brewed with calf testicles. Weyenkop (spelling) brewed it and it just tasted like a good stout.

Curried Lambballs
Chop and sautéed a carrot, a green bell pepper, an onion, and a diced tomato, put in crock pot on high

Sautee a very finely chopped shallot and some garlic, put in mixing bowl with a pound of ground lamb.

Add a tablespoon of curry powder, salt and a teaspoon of smoked paprika. Mix the meat mixture very well and form into one inch balls.

Brown the meatballs in olive oil, add to crock pot with 2 cups of chicken bouillon.

Stir 3 tablespoons of flour into the oil and stir until the flour is nicely brown., add to crockpot and stir.
Add curry powder to taste. I use generic curry, hot Madras, and red curry.

Simmer on low in crockpot for 3 hours or until the carrots are soft, adding curry as needed.

Serve over rice, couscous, or quinoa.
