I was brewing from 12:30-4:30am due to some time constraints which was my first mistake, and while trying to get things moving, I accidently dumped an extra 1/2lb of wheat DME into my hefe. I didn't break out my hydrometer because I was too tired, so I'm wondering what I can expect. I've never brewed a hefe, just ambers and this thing is stinking up the closet. Then I read other peoples hefes blowing the airlocks so I've moved it to the kitchen where it can make a mess while I'm away. So basically I'm lacking an OG, and didn't compensate when I probably could have. I would have gone with some more water except I'm trying to keg this.
