After putting up with moaning, groaning crews last night, I came home boiled two hot dogs for breakfast and pulled a pint of Kolsch from the keg. It's crystal clear and makes me proud. While mulling over the past two shifts, I decide to test a bottle of Irish Blonde that I bottled last week. It's just got enough fiz to create a few bubbles. I came well over on this and the ABV is over 7.25%. Christ sake it's not even 10AM and I have a buzz. That's it, I'm going to bed. Since I work night shift, this is my PM happy hour. lol But on a serious nose, I'm really concerned I blew two batches of beer coming in too heavy. Both are over 7%. Irish Blond and a Belgian Wit. I was not shooting for anything that high. I'll give it another cpl weeks before wasting another bottle. But the Blonde I poured this morning was crystal clear. Two weeks primary, 4 days cold crashing. No finnings, no secondary. Looks beautiful, just too much ETOH. It almost taste like wine.
