Coffee. About to grab a beer I think. Major water fail...15 minutes into the mash, pH reading was 6+. Got it down to 5.5 with some lactic acid, but damn...

Yep. It was just one strain for brett. Brett C with no bugs or mix. So other words not sour or any sour quality. Just nice fruity brett that might get funky in the bottle

Assuming WLP645 is actually just brett.

This after pitching the yeast.

Had to resort to US05 and half pack of M44 since my little Malta experiment never turned out. The only thermometer I had that could measure temp was in the flask and crapped out on me. I think the starter was too cold and took a long time for it to get going. I ain't got time for that! After cold crashing and seeing minimal results with yeast cake size, I'm just going to wash it and put it in the fridge for next time. So goes home brewing!

Headed down to St Pete tonight were there is fresh beer everywhere so I'm pumped about that.

Water. Shower head busted, rather the hose sprung a leak and got water everywhere before I noticed. I've had it 6 years and it wasn't exactly expensive when I bought it, I just love it though. Nowadays, $50 gets you straight up terrible looking plastic and a hose that is incapable of not smacking me around when I shower. I only know because I put one in my guest bathroom and used it 2 weeks ago. Anyway, I'm gonna duct tape it since I'm headed out on a party bus to a brewery ... I don't think I'll be home depot ready afterwards.

I hate when that happens. I got lucky last brew day and ran out right when I hit my strike temp.

That stinks. I have 3 propane tanks and make sure there is at least one, full tank as a spare at all times for that very reason.

Ok, back to drinking my Norm and boiling some wort. Still at 198° when I got home. Thankfully it is a 90 min boil so didn't have any hops added yet.

I don't really ever plan out brew days, but I was planning on enjoying some good beer over this weekend. SWMBO has a baby shower now and one tomorrow, and we have a birthday party for nephew and neice in a couple hours. Don't want to bring the beer to the party since most of it won't be appreciated.
