Just took a sample of my imperial pumpkin and the results are... interesting. It fermented out way further than I thought it would. It was supposed to only go down to 1.021, but my hydrometer just read ~1.010-1.008. That makes for an ABV of ~10.2% rather than the orginally planned 8.9%. Looks like my mash temp was a bit off. The maple syrup is also quite prevalent. Hope that tones down a bit. I brewed the exact same recipe last year and this is a completely different beer.
