I'm interested to see how this turns out. I'm doing a re-brew on it this week but this time I'm not subbing any hops, sticking to the original. And I'm using WY1098 for the yeast, supposed to be the same as the WL007.

I am too... It isn't the taste alone that I am trying to match this time. The last one was very close in that regard. I am shooting for the hop flavor intensity & aroma this time...

I'm also going to dry hop very quickly after fermentation into a keg. And get it on gas. Will probably leave the centennial dry hop in the keg as well.

Previous attempts were always bottled & I think a lot of the punch was lost.
 
Closest attempt yet. Well, based on the hydrometer sample.

The aroma (still have to dry hop) is definitely in the ball park.

Cool, I have yet to rebrew. Cold weather and illnesses have interfered. Hopefully this coming week. And I have the real thing in hand so I can compare. The One Claw is really good too!

I am really thinking that something went wrong when I bottled the batch prior to this one.

Can a beer bottle condition at too high of a temperature? Creating medicinal type off flavors?

I get that when my IPA is too fresh. I had one that tasted just like dish soap at first. After a few weeks in the bottle, it came around, though.

Interesting... Mine never did.

Several bottles blew in the process. I don't know if it was too high of a temperature or too much sugar.

I hardly ever bottle so probably a combo of both.
 
Good deal.

My last came out very close.

I think it needs the 15 min addition though.

The 30 min is much more debatable.
 
Was just there and noticed they substituted the 15 min and WP of Chinook for Amarillo on their latest batch. Interested to see how that comes out. Such a great IPA.

I just brewed it again too.

Stuck with the scaled recipe except I did a .50 ounce FWH instead of .25.

6 gallon receipe
 
Kegged mine the other day and the flat, warm, not yet dryhopped sample tasted promising. Pulling dryhops today and putting it on the gas. Will update in another week or two. I think this one is going to be pretty darn close to the original.

Sounds like we are neck & neck...

I did 2 oz of Centennial, .50 oz of chinook & .50 oz of cascade for 7 days.

Added another 2 oz of centennial to the keg.

It's still carbonating..
 
Wish someone had a picture of the One Claw recipe. I'd love to brew a clone of it.
 
10% rye and a lot of late Nelson Sauvin...

I may be able to get something next time out..

Munich 6.5%
Wheat 6.5%
Chinook 60 min 6% of hops addition
Citra 15 min 31% of hops addition
Citra WP 42% of hops addition
Nelson WP 21% of hops addition
Nelson Dry Hop 11 lbs per 60 bbl for 7 days (about .1 oz per gallon, if my math is right)
Citra Dry Hop 22 lbs per 60 bbl for 7 days (about .2 oz per gallon, if my math is right)

Ferment 68*
Mash temp 154*
 
I doubt the 20 IBU is measured - they are likely not including the isomerization of their WP hops in their IBU number. For some reason brewing software doesn't think end of boil additions contribute any bitterness...
 
That's the recipe from brewery. Trust me I was surprised by the IBU too.

1.5 lbs Chinook 60 min
8 lbs Citra 15 min
11 lbs Citra WP
5.5 lbs Nelson WP

Have read, and would assume, kettle hops are for a 30 bbl boil. Someone correct me if I'm wrong, please.

So:
.025 oz of Chinook per final boil size
.135 oz of Citra per final boil size
.186 oz of Citra (WP) per final boil size
.093 oz of Nelson (WP) per final boil size

Please correct my math if it's incorrect.

Would make sense. They use 60 and 120 bbl fermenter.

22.4 IBU without the whirlpool additions so I guess 20 IBU is about right...

I guess that means that the 65 IBU on their IPA could be calculated the same.
 
Did you adjust/tweak hop weight in recipe? Because the numbers I came up with for hops per gallon multiplied by your boil size are a little higher than your recipe hop weights. I know that would raise IBUs too and get it too bitter.
