Weird bitterness

I am fermenting 15 gallons of mead. Up until this week at sampling, it has tasted clean. Not it has an odd bitterness once the gravity got below 1.000. expected abv is 8.7% and fermented with a Belgian strong yeast. Has anyone else had this happen?
 
My first ever one gallon batch did this in the end I decided it had gone sour I assumed due to some lack of sterilization on my part. I dumped it and tried again with better success so far. Hopefully you find a better solution I would cry if I had to dump 15 gallons of good brew.
