Hi all!

I decided last minute to do a watermelon-lime tequila seltzer for my son's birthday next week. I'm planning on doing a non-fermenting method given the short time window.

I've done vodka seltzers before and they've turned out pretty good.

Thinking like, 1L tequila to 5 gal (should be like 5%)

Questions are: how do I do the watermelon?
Puree and add? Is there a way to strain it? Should I just bag it? How much do I use?

Are you going to ferment the watermelon juice/pulp?
Or just keep as is, sweet, just adding tequila and lime juice to taste.

I've put watermelon chunks in a blender, it makes a very nice, tasty, and rather thick pulp. There will definitely be mouthfeel (texture) due to the pulp, similar to orange juice that contains pulp. I like it that way.

If the pulp is not wanted, you could press and strain the blender pulp using a fine sieve, voile bag, or centrifuge.

Mind, watermelon pulp will spoil quickly so use clean and sanitized equipment. And keep it cold.
