Hello!

I'm on Day 5 of a Mead destined for 14% abv, using D47.
3 gallon batch
12 lbs honey used
OG 1.107
Spec Grav today is 1.060
Currently at about 6.5% abv and a PH of 3.35.
Is that PH getting too low? Been degassing daily but per my understanding that stops now that I've crossed my first sugar break. Concerned that if/as the PH continues to drop I may start stressing out my buddies in there.

Picked up some Potassium Carbonate - should I use? If so, how best to do it, how much?

Thanks!

The BOMM protocol calls for 1/4tsp per gallon to provide K to the yeast and buffer the ph. I’d start there, then add more if needed if it’s overly acidic.

Will do. Thanks! Do you have a recommended PH to not let it drop below?

Update:
Last night I added 3/4 tsp of Potassium Bicarbonate to the 3 Gallon batch. It fizzed happily. Checked it again today and it only went from 3.35 to 3.41. But Abv is now 9.1 - a nice jump. Maybe the Potassium Bicarbonate did more than I'm seeing because the ph dropped as the abv rose? Not sure if that actually happens.

Either way, added 1 tsp Potassium Bicarbonate today. Will check PH again tomorrow.
