Wai-iti Wheat recipe... Thoughts?

Need help on the orange and lemon peel... Id like subtle flavors, but have never worked with lemon, so not sure what to expect...

Most of the grain bill is baed off another wheat I did recently, so it's tweaked to where I want at this point... Trial and error :drunk:

Cohesion Wai-iti Wheat
American Wheat or Rye Beer (6 D)
Type: All Grain
Batch Size: 5.65 gal
Boil Time: 60 min
Fermentation: Ale, Two Stage
Est. ABV: 5.1%
Est. IBU: 19

Water Prep
1.00 Items Campden Tablet

Mash Ingredients
4 lbs Pale Malt (2 Row) 40.0 %
4 lbs Wheat - White Malt 40.0 %
1 lbs Honey Malt 10.0 %
1 lbs Wheat, Flaked 10.0 %

Mash Steps
Mash In Add 13.10 qt of water at 167.6 F 152.0 F 60 min
Batch sparge with 2 steps (Drain mash tun , 5.22gal) of 168.0 F water

First Wort Hops
0.50 oz Centennial [10.00 %] - First Wort 20.0 min Hop 6 10.9 IBUs

Boil Ingredients
1.00 Items Whirlfloc Tablet (Boil 15.0 mins)
0.50 oz Lemon Peel (Boil 5.0 mins)
1.00 oz Amarillo [9.20 %] - Boil 5.0 min Hop 9 6.0 IBUs
1.00 oz Wai-iti [3.30 %] - Boil 5.0 min Hop 10 2.2 IBUs
0.50 oz Orange Peel, Sweet (Boil 5.0 mins)

Steeped Hops @ 170f
1.00 oz Amarillo [9.20 %] - Steep/Whirlpool 0.0 min Hop 12 0.0 IBUs
1.00 oz Wai-iti [3.30 %] - Steep/Whirlpool 0.0 min Hop 13 0.0 IBUs

Estimated Post Boil Vol: 6.40 gal and Est Post Boil Gravity: 1.050 SG

Fermentation Ingredients
2.0 pkg American Wheat Ale (Wyeast Labs #1010)
1.0 pkg American Hefeweizen Ale (White Labs #WLP320)

Fermentation
Primary Fermentation (10.00 days at 68.0 F ending at 68.0 F)
Secondary Fermentation (3.00 days at 68.0 F ending at 68.0 F)

Secondary Ingredients
0.50 oz Lemon Peel (Secondary 3.0 days)
0.50 oz Orange Peel, Sweet (Secondary 3.0 days)
1.50 oz Amarillo [9.20 %] - Dry Hop 3.0 Days
1.50 oz Wai-iti [3.30 %] - Dry Hop 3.0 Days

Est. FG: 1.011
 
I think you'd be fine with just 2 packs of yeast. Dont waste 3, or better yet, make a starter from 1, save some to harvest, and never have to buy yeast again

I've used wai-iti and was a bit underwhelmed by it. It smelled great, but didnt really transfer over to the beer

One other thought, not sure how familiar you are with honey malt, but 1lb is pretty high. I usually do 4oz, Ive done up to 8oz, btu id never put a full lb in a 5gal batch. Its potent and makes itself known.

Are these peels dried from a brewing supply store? Additions look fine, but if you are just tearing the peel right off a fresh orange like I do, i'd add it right at flameout

Never had Wai-iti, but it smells great, so I'll tweak after if it's not pronounced.

The honey malt at my store was used in my last one and it didn't come through as much as I'd like, which is why I'm going 1lb.

It's dried from the store.
