One of the vines I was training, had the "tip" broken off (about 6' tall). I assume it was due to the wind. Is this vine "ok" or should I trim it back all the way?

The first node (set of leaves) directly below the break will send out two new shoots in a week or so. You can allow both of these to grow or just snip one off and the other will become the new leader. This is what farmers do when something like a hail storm creates a bunch of damage.
