I made the Raisin Wine using the recipe posted in this forum eight weeks ago. I know that many of you let your wine sit in primary for months, but I am anxious to bottle part of this one and perhaps rack off half of it to secondary on top of some spices to age for the fall/winter.

Airlock has been quiet for a couple of weeks, have not taken a gravity reading.

Can I bottle the whole batch, adding some spice to individual bottles, and then let it age in the basement over the summer?

Thanks!

If wine making has taught me anything it's patience. Take a reading and once it's lower that 1, then I'd wait a few more weeks. Nothing is worse than losing bottles to blow corks or bottle bombs. Give it a little longer, if you are adding anything to the wine, I would use some potasium sorbate, you never know if some spice has some sugar to ferment.
