So I was getting my soon to be brew room cleaned so the electric company could come put in my new subpanel and realised my ceiling is way to short for a hood, So I was wondering my options as far as ventilation could I possibly use a window fan? I didnt think about it because I am not the tallest person in the world at 5'8" and my ceiling is only about 7-8 foot?

Not sure where I saw it on here I will try to find it, but someone built a cone shaped cover for their BK and have it hooked to a flexible vent hose like a large dryer vent and attached to a remote fan to vent outside...I am going to try the same, sits on top of the BK.
 
My basement has the same celling height as yours. I built one like this and the bottom is just above my forhead I am 6' 2". Its workable I have plenty of room above the kettles to work. I did shorten the height of it by a few inches and widened it by a few as well.
 
My temporary hood is only 12" tall.. that would leave you some head room. I am 6'3" and my ceiling is only 7'6"
