Using intense bitter black malt instead of "debittered" ok?

I guess we'll find out because that's all the local joint had, but I was curious as to the difference between the two. I'm assuming it affects the resulting ABV? What else might it do flavor wise, though????
 
debittered means the husk was removed. Highly kilned grains have a bitterness to them that is desirable in some beers like a dry stout but is undesirable in others like a black IPA since it might make the beer too bitter with the hop additions. depending on the style and how much you are using it might not be a big deal.
 
It won't affect your ABV at all. You get very little fermentable sugar from any highly roasted grains. There will be a big difference in flavor though. The husks in the grain will impart much more roast flavor than the de-bittered roast malts which has had their husks removed.
