I just acquired a couple used kegs from a Craigslist ad. They are relatively clean but the seller said one was previously used for sours. What would everyone suggest I do to properly deep clean this keg so I avoid contaminating new beers (I don’t do sours)? I was planning on the obvious of a complete disassembly and replacement of all the O-rings and maybe boiling the poppets. These are pin lock kegs. Is there a certain cleaning solution I should use for the stainless? I’m also not sure what to do with the pin lock style PRV in the lid. Is a short term soak in a bleach solution advisable for any or all the parts? Am I being paranoid for nothing?

I'd clean it like normal . Pbw soak and run through the dip tube . I've seen people here talk about letting it sit in the sun for a bit .
 
Good old heat treatment *after* thorough cleaning. Fill it entirely with boiling (or almost boiling) water and let it sit at that temp for 15 mins. Soak parts in that temp water as well.

Bleach can damage metal so I wouldn't go that route.

Bleach I'd be using for plastics/rubbers that can't withstand near boiling pasteurization. Kegs and their parts shouldn't have any issues with the temp.
 
Can you find out more about what type of sour? If it was just lacto, clean it like normal and don't worry about it (Lacto is very hop intolerant - 10IBU will take care of it). It had pedio or Brett, go with something more intense as above.
 
Above 180° brewery wash (PBW, Oxyclean) soak for 25 minutes followed by a rinse and then sanitizer soak for 25 minutes with kill about anything. You can put all the fittings and orings in a steamer basket on the stove or in an instapot for 15 minutes. If the PRV is plastic like most are dont put that part in the instant pot it will warp. I have steamed the PRV without it melting.
 
In addition to the above mentioned:
Run a cleaning brush (a 3' long 3/16" draw brush) through the dip tubes with Barkeeper's friend (BKF) and polish out all the crud. It may take a few times.
 
I would go ahead and replace the poppets just to be sure, it is cheap enough insurance along with all the o-rings that you plan on replacing.

Also, for the dip tubes, if they fit in your oven, you could actually use your oven to dry heat sterilize them (just make sure there isn't other 'stuff' in the oven that hasn't been cleaned out). If you do that, make sure to remove the o-rings before putting them in the oven!
