About a week ago I posted a few questions regarding my first brew: an extract clone kit of the Weihanstephaner Hefe Weissbier. I'm pleased to say that brew day went well, and we got done soaking and cleaning a grip of bottles today.
I also went down and checked the gravity (this is almost exactly one week from pitching the yeast) and it was at about 1.016, the target is 1.012. I also took a sip, and in spite of it fermenting at about 61 deg F, I still got a bunch of banana esters off of it. It tastes almost exactly like the real deal, sans carbonation.
The game plan is to keep it in the primary until I get it down to the target gravity. However, the instructions say to get it into a secondary at the point I am currently at in order to clarify it a bit. It is definitely VERY cloudy, but after reading around on here, it seems that the consensus is to avoid racking to secondary.
Any input re: increasing the clarity/racking to secondary?
