I made about 4 gal of mead using an online recipe. Even though I followed the recipe to a T, the end product was thin and way to heavy on cloves [ the recipe called for allspice and cloves - my wife informed me that allspice is mostly cloves in her critique].
I iced the product and removed about about 35% of the water. The mead iks now thicker, but bitter and "clovey"
I intend to backsweeten the mix using 1/5 cup of honey per gallon of mead.
Anybody have a proven method of unscrewing this mess other than what I have planned?
