I made 10 gallons of a spring lager out of the Brooklyn Brewshop book (it's a good book fyi). I pitched a healthy starter of SF-23. OG was 1.055. It's been in my basement at 50 degrees. Thoughts on how long it will take, I haven't taken a gravity reading yet fyi.
 
I usually like to leave it on the yeast 4 weeks and age for 4 weeks, unless I am doing an real light American lager then I go 2 on yeast and 3 weeks with gelatin.
 
I usually let my ales age for at least 4 weeks in the bottle. Lagers should be even longer. I would say at least 3 months.
 
By 3 months my Pilsners are fading. 2 is about perfect. Malty styles get better with more time, but hops are fragile.
 
I should say that my last glass of beer out of my kegs is the best of them all. Unfortunately I tap them early to sample them and see how its going. I usually have a few before they hit their prime. And by a few few I mean all...
