I have two beers that have aged and though they are separate recipes, they are starting to taste the same.
One is a amber English Ale (S-05) and one is a plisner Ale (T-58).
Now that both have aged and the yeast have really dropped out. They beers are starting to taste the same (smooth and oaky).

Smooth & oaky sounds pretty darn good to me. But using ale yeast in a pilsner would tend to make it more of a light colored pale ale.

Yes. One is a light colored pale ale. The other is a bit darker.
The taste is like smooth whiskies. -- a little sweeter, no heavy alcohol tastes.

I am wondering if all Barley Malt, plus hops, clear ales eventually smooth out in that direction once the yeast drops out.
