I've got a bunch of hops in the freezer and Im looking to clear some out by using up a bit of my Simcoe and Amarillo.

Im looking for a refreshing and clean grist character with a fruity punch of hops. I dont really want a lingering and harsh bitterness so Im trying out my first attempt at First Wort Hopping and basically Hop Bursting at the end to maximize hop flavor and aroma. I want the focus to be clean and powerful hop aroma and flavor.

I havent either but Im smitten by the idea. I love the esters of English Ale Yeast but I hate the attenuation. I like my PA's and IPA's, hell, I like most all of my beer to finish below 1.012. The thought of a 1.010-1.012 IPA with some ester character blows my mind.

That's a sexy recipe, not even gonna lie.

Only thing I'd change is to switch your 2 minute additions to KO. That's just me. Do what you want, it's your recipe :p

I will probably end up using them at flame out. I'm expecting this to be a brilliant straw color with a sweetish lovely malt character finished with a HUGE flavor and aroma of American citrus hops. I love the strawberry-esqe ester of 007 and I'm thinking it will blend nicely with Simcoe and Amarillo.

I found some Sorachi Ace at the LHBS while I was mashing so I snagged an ounce and threw them in there too. Can't wait to drink this. I ended up hitting 1.062 and had 0 snags...good brew day!

Tuscarora IExtraPA is now officially beer.
 
WLP007 works as advertised. It was very fast in chewing up the wort in 3 days. It was brewed Weds and was starting to clear this morning. I'm going to give it until this Weds and hit it with the dry hops for 10 days...then bottling. It's a cool brew and smells great without the dry hops. As light as it is, I'm inclined to call it "Wolf in Sheep's Clothing" as it will definitely be much more powerful than it appears...
 
I had forgotten to calibrate my new hydrometer. I originally thought I had shot high by 2 points but upon calibration now realize I hit my target dead on the money at 1.060. That said, I pulled a sample this morning since the beer has cleared already. I hit 1.012 for a final gravity and an apparent attenuation of 80%. Spot on what to expect for 007. The beer is a beautiful light golden color. It has rather unique aroma as the "cattiness" of Simcoe in conjunction with Amarillo and Sorachi Ace lends a white Niagara grape type aroma. The beer tastes nice and grainy as you'd expect with that grain bill. I went ahead and dropped the dry hops in (1 oz Simcoe- 1 oz Amarillo- .25 oz Sorachi Ace) I'll let it go 10 days and bottle. All signs point towards a unique and delicious beer.

I'm from central PA where everything is named for the native Americans. I grew up in Tuscarora Township so I'm doing a series of IPA's with native American names. I have Juniata, Shawnee, and Iroquios to go. It's sort of lame, but sentimental.
 
Nah, I think it's pretty cool. I asked because the history of the Tuscarora people shows strong ties to NC prior to European settlement.

I believe the Tuscarora people came from NC en route to NY to join with the Iroquois. At the time, it appears as though the Iroqouis lived further South than thought as there have been artifacts discovered here. Anywho, when the Tuscarora joined with the Iroquois many stayed in the central PA mountains. There was also a Shawnee tribe local to the area. The final name, Juniata, is the name of my home county and the river that runs through it. Juniata was an Iroquois word for "blue water."
 
Just chilled down a bottle and gave it a try. It's obviously uber fresh and not fully carbonated, but it's very tasty.
 
Update: nice beer. This beer is quite fruity in hop nature with a nicely balanced bitterness.
 
With a few months of age on this beer...it's become downright delicious. If you are looking for an IPA recipe, this one won't disappoint.
