Turbo yeast is a distillers yeast. It's not really suitable for anything you'd want to do here.
There are TONS of different yeasts out there for home brewing and it really depends on what you want to make. Two of my go-to beer yeasts are Safale US-04 and US-05. They're good, reliable dry yeasts. 04 is English (little more yeast character) and 05 is American style (cleaner, letting the malt and hop character stand out more). Those are both ale yeasts. For lagers you'll want to use a lager (bottom fermenting) yeast. If you're making a hefeweizen you'll want to use a hefeweizen yeast. Same for many of the belgian varieties. Wines have quite a few different yeasts. There are yeasts sold just for cider, or you can use various wine or beer yeasts.
You can make the exact same beer twice, follow the same recipe and have it come out totally different if you use a different yeast each time. It's just another of the variables in putting it all together.
