Hello all, first post on the forums though I have been lurking for some time. I am trying to formulate a grain bill to replicate 3 Floyds Drunk Monk Hefe. I am not experienced enough at formulating my own recipes from scratch so I could certainly use the assistance of some seasoned veterans. My goal is a 10 gallon yield to be bottled.

The best way I can describe it is "intense" banana flavoring. It really reaches out and grabs you both in the smell and the taste. It is very cloudy and has quite a bit of pure white lacing. IBUs are quite low, 10-15 probably. I am restricted to either a stable fermentation of 67-68 or a fluctuating temp of 70 - 76 or so. (one being my basement, the other being the first floor of the house.) I do use secondary fermenters.
Thanks in advance for the help.
