Aim for 25-30 IBUs 1 oz Hallertau at 90 min (adjust based on AA%) .5 oz Saaz at 15 min 2 lbs Clover Honey at flame out OG around 1.100 Belgian Yeast of your choice start it cool and let it rise on its own. I think 5 lbs of cherries would be enough for secondary, Mad Elf has some cherry flavor, but it is not as overwhelming as many fruit beers. http://www.brewboard.com/index.php?showtopic=61840&st=0&start=0 http://forum.northernbrewer.com/viewtopic.php?t=35109&highlight=mad+elf+clone
