So, my girlfriend loves cherries, I mean LOVES cherries. I was thinking of brewing her up her own special cherry beer, with multiple layers of cherry flavor. Specifically I want to incorporate the cherry's versatility into this brew as well, but the addition of both real cherries and cherrywood smoked malt.

The only problem is that I can't think of a base style or malt that would be a good common ground for both the fruit flavors, and a light smoking. Ciders are open as a possibility as well, I've never thought about smoking a cider.

I thought a cherrywood smoked cherry stout sounds fantastic but she doesn't like roasted beer! :(

Additional Information: She LOVES the tartness of cherry most of all, I heard the cherrywood can bring that on after it ages for a bit, but I would also be adding 2 varieties of cherries into the boil and/or secondary, sour cherries and sweet cherries.

I would just track down a good kriek recipe and sub in some of your smoked cherry malt. If you love cherries then kriek is the beer for you but by God you need a lot of cherries! I'm sure you could still do your various cherry additions.

If you're willing to take a gamble you could go down the stout route but use carafa special 3 and maybe a little chocolate. That way you wouldn't get much in the way of roasted flavours, just smooth and silky.

Good for you trying to make a beer your G/F likes.
The only smoked beer I tried was from Magic Hat and it was really nasty. I don't know anyone who likes smoked beers, they are not widely available because its a somewhat acquired taste.
You sure you like beers with smoked malt?
The smoke from cherry wood isn't going to add any cherry flavor.
A pub near me has Victory Brewing Kirsch Cherry on draft. Its tart, got the cherry character, a very nice fruit beer.
I believe is a Gose, which is one style I've been interested in but never made.
If you want to make a standard cherry beer, how about a cherry wheat?
Here's a recipe I found on Beersmith, uses both cherries and cherry extract. One thing I would change is to use tart cherries and not sweet.

Good Luck & Cheers!
