I'm moving 8 hours across the state next week with two propane tanks and two 20 lb CO2 tanks. Is it safe to transport these in the back of a Uhaul as long as I ensure that they are secured upright? It isn't going to get hot back there since it's in the 40-60 degree range right now and will only sit in the truck overnight.

youll be fine. same rule for anything volatile. secure it properly like ANY cargo.
 
All tanks of gases are designed for transportation.
Make sure all extraneous stuff is detached (regulators and the like)
Ensure that they are all closed properly
You never want a gas tank in an enclosed space with the driver (CO2 primarily because it doesnt have a scent)
Like the others said, secure them inside your Uhaul and you should be good, might want to open the doors and let the back air out for a few minutes before jumping in to unload, just in case some gas has seeped out in transit.
