On my municipal water report, there's total metals and then there's dissolved metals. The calcium, magnesium and sodium values are slightly different. Any insight regarding which value is to be used for brewing water chemistry would be much appreciated.

How different are the values? Assuming your water is filtered, there should be very little difference. Anyway, use the dissolved metals value - undissolved metals are solids, not ions (which is what we're interested in with water chemistry).
