Made my 3rd beer last nite. I used 8lbs of Alexanders pale malt extract, i steeped some chocolate malt until it started to boil, centennial and cascade hops, and Nottingham yeast. Its been going pretty strong since this morning a lot of foam coming out, more so than my other too beers. Its 5 gallons also...did I over do it with the amount of extract?...what kind of alcohol level can I expect?

Based on the calculator I just googled and used you'll be somewhere between 6-8%.

On a side note you may get some off flavors from steeping your grains at such high temperatures.

When you steep you want to keep it in the 150-165 range for 30 minutes 170 is your max temp for steeping in general. Once you start creeping above that you increase your chances of off flavors.

Do you have the ability to set up a blow off tube? That would help with your foam.

You will be fine. There is a slight chance if extracting tannins. But you only used a small amount of grain, and you would be unlucky to have the wort in the ph region.

'Brewing Beers Like Those You Buy', circa 1970 by the late Dave Line, provided directions to leave steeped grains in for the whole boil for extract brews. While we know a lot more now, and wouldn't advocate that practice, one must assume it produced decent beer.
