I finished my first batch about a month ago now. I brewed an Irish stout kid from Midwest. All my bottles were brand new and sanitized and I took all proper steps throughout the brewing/fermenting/bottling process. So here is my question. I had 48 perfectly clean and sanitized bottles filled up and then realized that I needed 2 more. I grabbed 2 empty Sam Adams bottles cleaned them out and soaked them in one step for 5 mins. All of my bottles have been great so far until last night when I opened the 2 Sam Adams bottles. I wasn't able to actually taste the beer but when I popped the cap it was like a volcano erupting. I got foam in my eye and all over the kitchen counter. Same deal with the second Sam Adams bottle but I was prepared and had it in the sink. Can anyone tell me what may have happened so hopefully this doesn't happen to me on my next batch.
