So I just brewed a celebration clone based off of the below recipe, I dropped the IBU's down to 36ibu's, and upscaled the recipe to a 10gal using beersmith2 and went to town. I did this because i like the celbration ale, but it's insane on the hop additions. I ended up netting about 14.5 gallons, with a lower OG than expected 1.060-1.065 that I'm ok with i'll just boil up some priming sugar for 15 minutes chill it and dump it in the primary. my concern is i didn't have time for a yeast starter, and I ended up with an extra 4.5 gallons of wort to ferment. I'm thinking of doing one of the couple things below.. I have already pitched 2vials of wlp001

1. buy another vial, run a starter for a few days then pitch
2. buy another vial and pitch now

On a side note, beersmith2 kicks ass! IMO I will be buying this software.

Add 1 oz. Chinook hops to the mash. Single infusion mash at 154 deg for 60 minutes while recirculating. Boil 90 minutes. Use HopBack for final hop addition. Ferment at 67 deg. Add dry hops after about 5 days or once airlock bubbles are 15 seconds apart. Dry hop for 5 - 7 days or until desired flavor is reached.

So you've pitched 2 vials for 14.5 gallons. I think without a started, you'd really need 2 vials per 5 G at that OG.

so rather then wait 2-3 days for your starters, missing some of the primary fermentation - I'd buy 3 vials and pitch now. Not 1. You'd still be underpitching by quite a bit unless I'm missing something. But I'm also more interested in my fantasy football team right now then calculating this. :)
 
Thanks Luke, I'll go pick a few up now. I figured I was low not quite that low but egh this is why i use dry yeast... simplicity and consistancy and cheap.. i'm saving this yeast cake...
