Hey all,

Rebrewing an oatmeal stout this weekend and I wanted to give a shot at roasting my oats before mashing in.

I know I have read that roasting your own grain can lead to some astringency unless you allow the grain to offgas for a week or so before use.

I was wondering if this is the same for roasting oats. Any insight would help!

You just want to toast them a few days before brewing and put them in a paper bag to get rid of the oils produced during toasting/
 
They will add a nice toasty/nutty flavor; nothing astringent.
