Irish red ale (All Grain) was primed and bottled two weeks ago today. Bottles have been resting totally undisturbed since then, in the mid-70s. Waddaya think?
 
I am tasting mine every week just to see the progression over the weeks since I'm newer at this. Today is week 2. It's good but I can tell it's not quite there. It won't hurt to throw one in the fridge overnight so I say go for it.
 
Chill and give one a try. If it is well carbonated you can start drinking them. However, I have found that my beers taste better at 3 weeks or longer. Depending on style maybe 6 months to a year. The Irish Red should age well at 3 weeks to a month and keep for 6-9 months or more, if they last that long.
 
I start drinking my ales at 14 days usually, unless it's a big/special one like a barleywine or RIS.

Slowly at first then daily after about 6-8 weeks.
 
Like others here, I am usually having a few 2 weeks after bottling, and really enjoying them 3 weeks later. That said, I'm bottling 2 batches this weekend for a party in 2 weeks. :rolleyes:
