How do you all taste test your ciders once they are bottled? Do you just open up a whole bottle? Then dump it if it needs to age more? Recap it? I have been hesitant to try any of the batch I bottled 3 weeks ago cause it was only a 1 gal batch and I only have 8 bottles of it. I do have one plastic bottle that I used as carb testing, maybe I could take a swig of that and then twist the cap back on?
 
Don't open the plastic bottle, you'll lose your carb sample. Try one of the others. If it's not carb'ed enough wait a week and try another.
Drink it.. enjoy.
 
I bottle wine in 6 oz clear glass bottles. I bought a case from the homebrew store. This makes available a glass at a time. I think would be perfect for the inspection scenario you have laid out here.
