So... made a dumb mistake. I just eyeballed my thermometer placement on my kettle and when i tested the water levels, the probe of the thermometer sits about half an inch above the water level (after boil off).
The good news is that it is a few inches below water level pre-boil. My thoughts are that pre-boil temps are more important because once i ramp the wort up to boiling, the temperature is fairly obvious. After that during the cool down, it will sit about half an inch below water level so i know my temps might be a bit low but i should be ok?
Am i missing a big issue here? Do i need to go buy a new pot?
FYI i do three gallon batches and start with about 4 gallons
