Building a boiling kettle for a 10 gal. all grain setup. I'm thinking I'm gonna go with a penrose. (I'd better order soon before the price goes up again). I was debating on whether to have them drill and weld two holes - one for a sight glass and one for a thermometer, or to just have them drill one hole and use a combo from brewhardware. Main concerns are that Them to be in a place where I can do 5 or 10 gal. batches. and if I break something I may have trouble replacing. any opinions?

sorry, just saw the other thread of the guy asking the same thing, somehow every time i post i end up feeling stupid. But i could still use some advice on where these things need to be installed
