Started using my Thermapen to get chip fat at 170C, burn my fingers folding it up every time as it never usually gets nearly that hot
 
The Thermoworks Dot is ideal for hot oil. Probe stays clipped to the side of the kettle. Good for sous vide and checking mash temperature also.
 
Even after posting this - I've literally just done it again
 
You're making Freedom Fries? 170C is way lower than I'd expect for frying something like that. Unless you're doing 2 temps? I par-cook fries at 325F, then finish at 375F.
 
My main fryer died last week, so I'm doing them in a pan and I can't wait forever for it to get to those temps - I do double cook them though
