The New 585

6 gallons fresh pressed cider from the 585 area code (LynOaken Farms)
30 drops Liquid Pectic Enzyme
4 teaspoons Yeast Nutrient
3 teaspoons Yeast Energizer
1 pack Brewers Best Cider House Select Premium Cider Yeast

Normally I would have used 6 teaspoons yeast nutrient, but I ran out. Not too concerned because the yeast packet says there is yeast nutrient included in the pack.

Starting gravity is 1.054. Taking Yoopers advice and not adding any sugar to boost ABV.

Started on 11/16/14 at 2 PM, temp is 66 degrees F. By 6 PM there was activity in the airlock.

11/17/14 at 6 PM, Steady bubbling in the airlock, temp is holding at 66 degrees F.

So far I am happy with this yeast.
 
I just used this yeast... Very happy with it.

Stayed clear, yeast nicely compact at the bottom. Clean crisp flavor.

11/18/14 @ 9 AM, vigorous fermentation. Surface of the cider looks like a rolling boil. No krausen to be seen.
