The Impossible?

I've got a homebrew comp that needs the entries in 3 weeks. If I put it up on Sunday 10/21, can I enter a simple Graff in the competition? Recipe is very basic... 3 gallons cider, 4 lbs DME (amber), 1 oz Cascade, 2 gallons H2O, and Windsor yeast. What do you folks think? DoAble?

I've never tried anything like that recipe so I can't say if it would work, but I've never gone from boil to drinking in less than about six weeks. I would probably withdraw rather than attempt it.
