Hello,

I use a spare fridge to keep my temps steady while my beer ferments. The problem is that the fridge can only hold one carboy at a time, and I want to brew more beer! I have done some researching, and decided to keep my beer in primaries for 3 weeks instead of racking to secondary (I don't care about clarity).

After I have steady hydro readings for a few days, can I take the carboy out of the 68 degree fridge and into my room's high 70's to condition for 2 weeks without producing off flavors?

Thanks for the replies guys. Although, I do not mean for storage just for 2 weeks conditioning. After the 2 weeks I plan to bottle.
