I am getting ready to go electric. My Question is it better to have temperature probe at the spigot where the wort/ hot water would come out (1.5 inch probe) or do you like having it in the pots (2-4 inch probe). I guess I am thinking if it is inside the pot the heating element would be just below the probe and I wouldn't get a good reading of the real temperature. If it is in line it would show the real temperature out of the pot.
Am I over thinking this?
 
On my current set up, I have an analog temp gauge on my brew kettle and I have my temp probe in a T where the mash returns to the mash tun. A friend that I brew with put his temp gauge on the outlet of the mash tun. I think I'd rather know what temp is going into the mash and getting the temp of it there instead of potentially raising the temp to have it come out at the desired temp.
 
I used to have my MT probe on the ball valve exiting the vessel. I decided to move it to the lid bulkhead where the wort re-enters the MT. This way I know exactly what temp I'm adding to the MT. I don't think there's a right answer, but this just felt better to me (plus I'm mashing in an insulated cooler and having the whole ball valve + tee + cam lock setup on the bottom was putting a ton of stress on the cooler walls.
