Hi, I pretty much went with duck taping the stc-1000 sensor to the side of the fermenter all these years, and today I first realized the fact that when you open the fridge, the temprature on the controller immediately start to go high.

I believe that is means that what I was reading by now was actually more of the ambient of the fridge... True?

What do you use?
 
The fermenter is a large cylinder, the sensor a small one. When you tape one cylinder to another the area of mutual contact is theoretically a line. IOW there is very little contact area and this area is isolated from the beer by a few mm of glass. The entire rest of the sensor's surface area is isolated from the air on the fridge by a thin layer of duct tape. So is the sensor in better thermal contact with the beer or the air in the fridge?

What I use is an RTD in a thermowell that extends 15 cm or so into the beer.
 
I have a pair of the square Better Bottles that have an indentation in the side. I can put the sensor into the indentation and have the bottles pressed up against each other forming a seal with a pocket that is the same temp as the fermenting beer. The readout doesn't change when I open the fridge door.

But really, the reading matters when the door is closed and the inside air has reached equilibrium with the liquid. What happens when the door is open doesn't really matter.
 
Tape the sensor to the fermenter. Put something over the sensor to insulate it from the air. I use whatever is on hand, a folded up paper towel or rag, or a sponge.
