Was just out looking at my 2nd brew and the temps sitting about 28-30C. From the limited stuff Ive read about brewing, this seems to be within reasonable limits.

But im wondering... whats the best way to keep the temp down in the fermenter?

And what temp should i be aiming for in order to get the best results?

Try sitting your fermenter in a tub with water or wrap it in a cool damp towel in a dark closet or basement.You could also try a fan as well. If you are brewing an ale try to keep it below 70deg F if possible and above 60F. So 21.1C and 15.6 C.

I just realized 28-30 is 82-86 degF. Thats way to warm, you really should cool it down. Do you have an active fermentation?
 
I just made a cheap little insulated box for my carboy. Go to a local hardaware store and purchase a large sheet of stryrofoam insulation. Cut it to make a box about 2 inches taller than and about 6 inches wider than your fermenter. Hot glue worked great for me to attach the box together and seal up the edges. Put your fermenter in there with a frozen 2 liter soda bottle filled with water (or soda I guess), and keep another in the fridge for when that one melts. I am maintaing mid 60's for my fermentation temps with just one bottle of ice, switched out every 12 hours. Costs about $10 here (maybe another $5 if you need a hot glue gun and glue sticks).

Ya know... i thought it was a bit warm... but like i said... everything i read (which wasnt much) said between 18-28C...

I just moved it to a cooler part of the house... just hope i havent fracked this one. Oh well... its all part of the learning experence, right...

Fermentation is still goin... it was goin nuts the other day, and now the airlock is goin off probably every 5 secs or so...
