First I would like to say I have learned a lot from this site!
I have stand up True t-23 fridge, I got for a steal for an old restaurant I used to work at, anyway I think the thermastat is bad, can I replace it with an anolog temp controller I have?thanks

Here is an excerpt from the owners manual. If you chose not to replace the control you could just bypass it and go with your analog control.

5. Cabinet Temperature
Control
A. Remove the two screws on the
right side of the evaporator housing that
holds the control mounting plate. Reach
behind the evaporator housing on the
control side of the cabinet and pull the
control bulb out of the receptacle in
the roof of the cabinet. Disconnect the
wires from the control. Check control for
continuity, replace if defective.
